Blue / very rare

Seared outside and completely red inside. 46–52 °C. Approximately 3 minutes.

Rare

Seared outside and around 75% red inside. 52–55 °C. Approximately 6 minutes.

Medium rare / medium

Seared outside and around 50% red inside. 55–60 °C. Approximately 7–8 minutes.

Medium well

Seared outside with a pink centre. 60–65 °C. Approximately 9 minutes.

Well done

Brown outside with a slight hint of pink in the centre. 65–71 °C. Approximately 10–11 minutes.

Very well done

Grey-brown outside and completely brown inside. Above 71 °C and more than 12 minutes.

Times and temperatures are approximate and may vary depending on the cut and thickness of the meat.
